Todos Santos - Chicago
Located underneath Quiote in Logan Square, Todos Santos is an extension of one of the most successful new Mexican restaurants to debut in Chicago in recent years. Like its restaurant sister concept, which focuses on regional variations of Mexican dishes in both traditional and contemporary formats, Todos Santos delves deep into the wide world of agave spirits. Going far beyond the typical tequila drinks and margaritas, the subterranean bar highlights offbeat varietals of mezcal, sotol and more. Drinks are courtesy of Jay Schroeder, an alum of Rick Bayless' Frontera empire, and formerly of the now-shuttered Mezcaleria Las Flores. Schroeder brings a world of research and expertise to the bar program, following frequent visits to agave-growing regions of Mexico. In addition to numerous seasonally infused cocktails, the bar features traditional drinking vessels from Mexico, and offers periodic mezcal classes as well, to further spread the word on the versatility and breadth of agave spirits.
